Ingredients
- 2 cups shredded cheddar or mexican blend cheese, divided
- 1/3 cup milk
- 1 - egg
- 1 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 1-14 ounce can cream-style corn
- 1-8.5 box corn muffin mix (such as jiffy)
- 1-4 ounce can chopped mild green chilies
- 1/2 cup diced onion
- 1-10 ounce can red enchilada sauce
- 2 cups cooked shredded chicken, turkey, or pork
- 1/2 cup sour cream
- 1/2 cup diced tomato- if desired
- - cooking spray

Step 11. Preheat oven to 400

Step 22. Combine 1/2 cup cheese and next 8 ingredients (through onions) in a large bowl, stirring just until moist. Pour into a 13 x 9 baking dish coated with cooking spray.

Step 33. Bake for 15-20 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with meat of choice; sprinkle with remaining cheese. Bake for 15 minutes or until cheese is melted. Remove from oven; let stand for 5 minutes. Cut into 8 serving pieces and top each with 1 tablespoon of sour cream and sprinkle with chopped tomatoes if desired,
