We love the taste of tamales but they're so time consuming to make. This recipe tastes pretty close to the real thing:)

Ingredients

  • 2 cups shredded cheddar or mexican blend cheese, divided
  • 1/3 cup milk
  • 1 - egg
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 1-14 ounce can cream-style corn
  • 1-8.5 box corn muffin mix (such as jiffy)
  • 1-4 ounce can chopped mild green chilies
  • 1/2 cup diced onion
  • 1-10 ounce can red enchilada sauce
  • 2 cups cooked shredded chicken, turkey, or pork
  • 1/2 cup sour cream
  • 1/2 cup diced tomato- if desired
  • - cooking spray

How To Make chicken tamale casserole

  • Step 1
    1. Preheat oven to 400
  • Step 2
    2. Combine 1/2 cup cheese and next 8 ingredients (through onions) in a large bowl, stirring just until moist. Pour into a 13 x 9 baking dish coated with cooking spray.

    3. Bake for 15-20 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with meat of choice; sprinkle with remaining cheese. Bake for 15 minutes or until cheese is melted. Remove from oven; let stand for 5 minutes. Cut into 8 serving pieces and top each with 1 tablespoon of sour cream and sprinkle with chopped tomatoes if desired,
