We have this for my girls and their friends - when they come over it is TACO night.

Ingredients

  • 3-4 pounds whole chicken
  • 1 can green echillada sauce
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 teaspoons chili seasoning
  • - salt and pepper to taste
  • 4 cups cooking oil - i use extra virgin olive oil
  • 12 - corn tortillas
  • 2 cups cheese
  • 1/2 - lettuce, shredded
  • 2 - totmato's chopped
  • - sour cream

How To Make chicken tacos

  • Step 1
    Clean chicken and place in crock pot add all ingredients cook over night. Remove skin and bone, shred chicken meat. keep warm, pour oil in a dutch oven or deep pan on top of stove, fry corn tortillas
  • Step 2
    Add shredded chicken, cheese, lettuce, tomato, sour cream to fried tortilla and enjoy.
