1Brown chicken in hot oil. Add broth, sauce and taco seasonings. Simmer 5 minutes. Add corn and pepper. Bring back to boil. Add rice, and remove from heat. Cover and let stand for 5 minutes. Stir before serving.
2Shredded cheese, lettuce, diced tomato, diced onion and sour cream cam be sprinkled on top for a more taco taste.
