I got this recipe from a friend of my husbands family. It is a hit with everyone in the house.

Ingredients

  • ·
    2 10 oz pkgs frozen chopped spinach
  • ·
    8 chicken breast halves
  • ·
    1 c mayonnaise
  • ·
    2 cans cream of chicken soup
  • ·
    1tbl lemon juice
  • ·
    1 tsp curry powder
  • ·
    1/2 c grated cheddar cheese
  • ·
    1/2 c buttered bread crumbs

How to Make Chicken Superb

Step-by-Step

  1. Recipe is for a 9 x 13 baking dish
  2. Spray the baking dish with non-stick spray. Spread spinach on the bottom, and place chicken pieces on the spinach. In a separate dish, mix the soup, mayonnaise, lemon juice and curry powder. Spoon on top and around the chicken. Sprinkle with cheese and top with bread crumbs. Bake at 350 for 70-75 minutes.
  3. Modifications and substitutions that can be made are:
    •fat free sour cream instead of mayonnaise
    •more curry powder for a stronger flavor
    •fat free grated cheese
    •Ritz crackers instead of bread crumbs, and more of them
