Ingredients
- CHICKEN
- 2 boneless chicken thighs cut into strips
- 1 teaspoon cornstarch
- 1 teaspoon peanut oil
- SAUCE
- 2 tablespoons hoisn sauce
- 1 teaspoon oyster sauce
- 1 tablespoon dark soy sauce
- 1/2 teaspoon sesame oil
- 2 teaspoons shaoxing wine or sherry
- 2 tablespoons brown sugar
- 1/4 teaspoon white pepper
- STIR FRY
- 4 ounces rice noodles
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 medium onion sliced
- 1 baby bok choy chopped white and green parts separated
- 4 ounces shiitake mushrooms chopped
- 3 green onions chopped
- cilantro for garnish
How To Make chicken stir fry with rice noodles

Step 1Mix the chicken cornstarch and oil together in a bowl and set aside. Mix the sauce ingredients together and set aside.

Step 2Cook the noodles according to package directions and drain.

Step 3Place the olive oil in a wok and add the onions and stir fry for 3 minutes. Add the garlic and stir fry 30 seconds. Add the chicken and stir fry 2 minutes.

Step 4Add the white parts of the bok choy and mushrooms. stir fry 3 minutes. Add the green onions and stir fry 30 seconds.

Step 5Add the noodles and sauce and stir to coat all the noodles and veggies in the sauce. Add the green parts of the bok choy and let wilt.

Step 6plate in bowl and garnish with cilantro.
