This is so easy to throw together in the crockpot on a cold winter's day! It can also be easily prepared on top of the stove as well. I prefer it served with cornbread, it is a wonderful comfort food. The beauty of this is that you can add or delete ingredients easily to suit your family's taste.

prep time 20 Min
cook time 6 Hr

yield 8-10 serving(s)

Ingredients

  • 2 cans diced tomatoes
  • 2 cans white meat chicken
  • 1 can creamed corn
  • 1 can whole kernel corn
  • 2 - large potatoes, diced
  • 3 - carrots, sliced
  • 1 - medium onion, diced
  • 1 - turnip, diced
  • 1 - stalk celery, diced
  • 1 can white beans
  • 1 can hominy
  • 1 tablespoon mrs. dash
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon dried basil

How To Make chicken stew

  • Step 1
Add the prepared vegetables, spices & herbs to the crock pot.
  • Step 2
Pour all the canned ingredients into the pot (no need to drain anything) breaking up chicken chunks with a spoon; mix lightly.
  • Step 3
Cover and cook on high for 4-6 hours (crockpot) or bring to a boil then lower heat to a simmer and cook for 45 minutes, or until the vegetables are done. (You could also cook this in the crockpot on low for 5-10 hrs).
  • Step 4
If stew is too thin, thicken by adding 2 T of instant mashed potatoes, then cook an additional five minutes.
