This is so easy to throw together in the crockpot on a cold winter's day! It can also be easily prepared on top of the stove as well. I prefer it served with cornbread, it is a wonderful comfort food. The beauty of this is that you can add or delete ingredients easily to suit your family's taste.

How to Make Chicken Stew

Step-by-Step

  1. Add the prepared vegetables, spices & herbs to the crock pot.
  2. Pour all the canned ingredients into the pot (no need to drain anything) breaking up chicken chunks with a spoon; mix lightly.
  3. Cover and cook on high for 4-6 hours (crockpot) or bring to a boil then lower heat to a simmer and cook for 45 minutes, or until the vegetables are done. (You could also cook this in the crockpot on low for 5-10 hrs).
  4. If stew is too thin, thicken by adding 2 T of instant mashed potatoes, then cook an additional five minutes.
