I honestly don't know why this was titled Spoonbread, but it is very good.

Ingredients

  • 1/2 cup yellow cornmeal
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1 cup chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 - egg yolks, beaten
  • 1 1/2 cups cooked chicken, diced
  • 2 - egg whites, beaten stiff

How To Make chicken spoonbread, mom's

  • Step 1
    Combine corn meal, flour and salt in a saucepan, add broth and milk. Cook, stirring constantly until mixture thickens and boils. Cook 2 min longer. Remove from heat. Stir in butter, cool slightly. Stir in egg yolks and chicken. Fold in egg whites. Place in greased 1 quart casserole and bake at 325 degrees 55-60 min.
