1Preheat oven to 375. Lightly coat a 9x13 baking dish with cooking spray. In medium bowl, combine spinach and cream cheese. Spread into prepared dish.
2In medium bowl,combine soup, milk, 3 tablespoons of the cheese,3 tablespoons of the oregano, garlic, and crushed red pepper. Reserve 1/2 cup of this mixture.
3Stir uncooked rice into the remaining soup mixture. Spoon this over the spinach. Place chicken, bone sides down, on top of the rice.Sprinkle chicken with salt and pepper. Spoon reserved soup over chicken.
4Cover tightly with foil and bake for 1 1/4 hours or until rice is tender and chicken is no longer pink. Sprinkle with remaining Parmesan and oregano.
