  • FOUR large
    chicken breasts
  • 1/4 c
    olive oil
  • 1/2
    onion, chopped
  • 1
    scallion
  • 1/2 lb
    frozen spinach, drained
  • 1/2 lb
    feta cheese, reduced fat
  • 1 Tbsp
    dill
  • 1/2 tsp
    pepper
  • ·
    optional oregano and lemon juice

How to Make CHICKEN SPANOKI

Step-by-Step

  1. PUT OLIVE OIL IN PAN
    ADD BOTH ONIONS AND SAUTE 1 MINUTE
    ADD SPINACH SIMMER 10 MINUTES
  2. BUTTERFLY THE CHICKEN BREASTS
    PUT THE SPINACH IN BOWL - COOL
    STUFF CHICKEN
  3. SPRAY COOKING SPRAY ON SHEET
    COOK IN BROILER ON EACH SIDE
    FOR APPROXIMATELY 10 MINUTES
    DEPENDS ON THICKNESS OF BREASTS
