This has been a favorite of my entire family, and when my kids were in high school, their friends stopped by for a bowl when they knew I had fixed this dish.

Ingredients

  • 1 - chicken
  • 8 ounces spaghetti
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 4 medium carrots, chopped
  • 1/4 cup chopped green pepper
  • 1/2 medium onion, chopped (optional)
  • 1 small jar sliced mushrooms (i dice these up in mine)
  • 1 pound velveeta cheese, cubed
  • 1 can rotel (i use mild.)
  • - salt & pepper to taste (i use lemon pepper.)
  • 1/4 cup celery, chopped

How To Make chicken spaghetti

  • Step 1
    In large pot, stew chicken, carrots, onion, celery, and green pepper together until the chicken is done. Remove chicken and bring broth to a boil; add spaghetti and cook until tender.
  • Step 2
    Next, add soups, mushrooms, Rotel, and seasonings; simmer about 3-4 minutes. Remove chicken from bones, tear into bite-size pieces; add to spaghetti and vegetables.
  • Step 3
    Add cubed Velveeta and simmer 2 to 3 minutes until cheese is melted.
  • Step 4
    NOTE: This is really good the second day when the seasonings and ingredients have had time to set together.
