This has been a favorite of my entire family, and when my kids were in high school, their friends stopped by for a bowl when they knew I had fixed this dish.

How to Make Chicken Spaghetti

Step-by-Step

  1. In large pot, stew chicken, carrots, onion, celery, and green pepper together until the chicken is done. Remove chicken and bring broth to a boil; add spaghetti and cook until tender.
  2. Next, add soups, mushrooms, Rotel, and seasonings; simmer about 3-4 minutes. Remove chicken from bones, tear into bite-size pieces; add to spaghetti and vegetables.
  3. Add cubed Velveeta and simmer 2 to 3 minutes until cheese is melted.
  4. NOTE: This is really good the second day when the seasonings and ingredients have had time to set together.
