A quick and easy "comfort food" soup for those cold nights. My family loves it and it's very easy to make. Homemade taste in a pinch!

Ingredients For chicken soup for dummies

  • 2 can
    32 oz cans chicken broth
  • 1 1/2 lb
    chicken breast tenders or nuggets, cut in bite size pieces
  • 3 clove
    garlic, minced
  • 1/2 c
    chopped onions
  • 3 Tbsp
    extra virgin olive oil
  • 5 sm
    potatoes, peeled, cut in half or thirds
  • 40 sm
    baby carrots
  • 2 c
    cooked orzo, rice, or other small pasta, drained, rinsed

How To Make chicken soup for dummies

    Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent

    Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.

    Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
