A quick and easy "comfort food" soup for those cold nights. My family loves it and it's very easy to make. Homemade taste in a pinch!

Ingredients

  • 2 cans 32 oz cans chicken broth
  • 1 1/2 pounds chicken breast tenders or nuggets, cut in bite size pieces
  • 3 cloves garlic, minced
  • 1/2 cup chopped onions
  • 3 tablespoons extra virgin olive oil
  • 5 small potatoes, peeled, cut in half or thirds
  • 40 small baby carrots
  • 2 cups cooked orzo, rice, or other small pasta, drained, rinsed

How To Make chicken soup for dummies

  • Step 1
    Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent
  • Step 2
    Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.
  • Step 3
    Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
