Chicken Soup for Dummies
2 can(s)32 oz cans chicken broth
1 1/2 lbchicken breast tenders or nuggets, cut in bite size pieces
3 clovegarlic, minced
1/2 cchopped onions
3 Tbspextra virgin olive oil
5 smallpotatoes, peeled, cut in half or thirds
40 smallbaby carrots
2 ccooked orzo, rice, or other small pasta, drained, rinsed
How to Make Chicken Soup for Dummies
- Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent
- Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.
- Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
