Ingredients
- 2 cans 32 oz cans chicken broth
- 1 1/2 pounds chicken breast tenders or nuggets, cut in bite size pieces
- 3 cloves garlic, minced
- 1/2 cup chopped onions
- 3 tablespoons extra virgin olive oil
- 5 small potatoes, peeled, cut in half or thirds
- 40 small baby carrots
- 2 cups cooked orzo, rice, or other small pasta, drained, rinsed
How To Make chicken soup for dummies

Step 1Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent

Step 2Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.

Step 3Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
