chicken & shrimp fried rice

Grandma Jannette it was her birthday & i had no money so i told her i needed her to come over to help me sew an outfit to wear to my dad's office party when she got there i had my dad,mom,auntie,& brothers, all at the house waiting for her,the table was well set & this was the dish served with salad & a birthday cake this was 25 years ago i am now 41 in two week & this is still a family dish for my grandma every birthday she is now 78years old & still loves it.

Ingredients

  • 1 1/2 cups rice, cooked, cooled
  • 1 pound chicken chopped small
  • 1/3 pound shrimp chopped small
  • 1 small yellow pepper
  • 1 small green bell pepper
  • 8 small spanish olives diced very small
  • 1 small onions, small white chopped small
  • 4 cloves garlic diced fine
  • 1/3 box of yellow golden rasins or chopped nuts
  • 2 large yams slice in slices
  • pinch salt to taste

How To Make chicken & shrimp fried rice

  • Step 1
    pre cook rice let sit to cool, in wok 2tablespoons of olive oil, stir fry chicken then add shrimps,garlic.onions,peppers, salt to taste,raisins or nuts, add rice,& olives cook for 10mins.place slice yam on grill till cook 4-5mins. & serve
