chicken scaloppine with basil sauce
Usually this is made with chicken breasts, but I am a dark meat girl, so I used boneless skinless chicken thighs instead.

Ingredients
- 4 boneless chicken thighs
- 3 tablespoons butter
- 1 tablespoon lemon juice
- 1/4 cup chicken stock
- 1/4 cup heavy cream
- 2 tablespoons capers, drained
- 1/4 cup fresh basil, chopped
- salt and pepper
How To Make chicken scaloppine with basil sauce

Step 1Pound the chicken thighs to get the same thickness. Season with salt and pepper.

Step 2Add butter to a skillet. Add the chicken pieces and cook about 5 minutes per side. Remove and keep warm.

Step 3Add the lemon juice and chicken stock. Bring to a boil.

Step 4Reduce to a simmer and add the heavy cream. Stir in the capers. Add the basil and season to taste.

Step 5Let it cook and reduce so it thickens a bit. Arrange two chicken pieces on a plate and spoon sauce over the top.
