chicken scaloppine with basil sauce

Usually this is made with chicken breasts, but I am a dark meat girl, so I used boneless skinless chicken thighs instead.

Ingredients

  • 4 boneless chicken thighs
  • 3 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/4 cup chicken stock
  • 1/4 cup heavy cream
  • 2 tablespoons capers, drained
  • 1/4 cup fresh basil, chopped
  • salt and pepper

How To Make chicken scaloppine with basil sauce

  • Step 1
    Pound the chicken thighs to get the same thickness. Season with salt and pepper.
  • Step 2
    Add butter to a skillet. Add the chicken pieces and cook about 5 minutes per side. Remove and keep warm.
  • Step 3
    Add the lemon juice and chicken stock. Bring to a boil.
  • Step 4
    Reduce to a simmer and add the heavy cream. Stir in the capers. Add the basil and season to taste.
  • Step 5
    Let it cook and reduce so it thickens a bit. Arrange two chicken pieces on a plate and spoon sauce over the top.
