Chicken Salad with Cashews

There is a little cafe here in town that serves this. According to everyone who works there it is a top seller. I have tried to recreate it as closely as possible & this comes as close as can be without the actual recipe. This is better the next day so it is great for potlucks and such. Hope you enjoy.

  • 1
    chicken breast, roasted (you can either get one from the deli or roast your own)
  • 1
    celery stalk, finely chopped
  • 1-2
    green onion(s), finely chopped (using stalks)
  • 1/2 c
    chopped cashews
  • 1/2-3/4 c
  • ·
    salt & pepper to taste

How to Make Chicken Salad with Cashews


  1. Shred or cube chicken. I usally do a little of both so that the salad stays together but you still get chucks of chicken in the finished product
  2. Salt & pepper to taste
  3. add remaining ingredients and mix well. Start with 1/2 c mayo then add as needed to get desired consistancy
  4. serve on bed of greens or on bread as a sandwich. I find that it goes great with egg bread & baby swiss - the flavors seem to compliment each other well.
