Ingredients

  • ·
    1/3 cup flour
  • ·
    1 tsp. salt
  • ·
    2 1/2 to 3 lbs. chicken cut in pieces
  • ·
    4 tbsp. butter or margarine, melted
  • ·
    1 1/2 cups fresh cranberries
  • ·
    3/4 cup sugar
  • ·
    1/4 cup chopped onion
  • ·
    1 tsp. orange peel
  • ·
    3/4 cup orange juice
  • ·
    1/4 tsp. ground cinnamon
  • ·
    1/4 tsp. ground ginger

How to Make Chicken Ruby

Step-by-Step

  1. Mix flour and salt on a plate and dredge chicken pieces in the mixture.
  2. . In skillet over medium heat, brown chicken in melted butter, turning pieces once. Mix the remaining ingredients in a pan. Bring to a boil and pour mixture over chicken. Cover and simmer for 35 to 40 minutes or til chicken is tender. Makes 4 servings.
