    chicken breast halves, skinless and boneless
  • 6
    deli ham sliced thin
  • 1/2 box
    cream cheese, room temperature
  • 4 Tbsp
    parmesan cheese
  • 1/2 tsp
    rubbed sage
  • 1 tsp
    parsley flakes
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    poultry seasoning
  • 1 1/2 c
    corn flakes
  • 1 stick
  • 1 Tbsp
    minced onions
  • ·
    fresh spinach
  • ·
    grape tomatoes, sliced

How to Make Chicken Roll-Ups


  1. In a food processor blend cornflakes,2 T. parmesan, poultry seasoning,sage, parsley,and pepper. Pour mixture into a pie pan or shallow bowl. Set aside.
  2. Add cream cheese, minced onions,garlic,2 T. parmesan blend till smooth.
  3. Flatten Chicken to 1/2" thickness. Spread cream cheese mixture on each piece of chicken. Layer spinach, deli ham slice, and tomato slices on each breast. Fold over sides of chicken and tuck ends; secure with toothpicks.
  4. Melt Margarine in a shallow dish. dip chicken in margarine and then coat with cornflake mixture.
  5. Place in a 3 qt baking dish. Bake at 350^ for 45-55 minutes or until chicken juices run clear.
