This is one of my favorite family recipes from upstate New York. Its a spicy, creamy take on Italian ziti and fairly easy to put together. My mom makes sure its always on the table at every family get together!

Ingredients
- 4 tablespoons olive oil
- 1/4 cup butter, melted
- 1 tablespoon minced garlic
- 1 medium onion
- 2 pounds chicken,cubed
- 4 ounces hot cherry peppers, canned
- 1/2 cup tomato sauce
- 1/4 cup cooking sherry
- 1 pint heavy cream
- 1 pound rigatoni pasta, cooked
How To Make chicken riggies

Step 1Saute onion and garlic in oil over medium heat.

Step 2Add uncooked, cubed chicken to onion mixture and cook until tender.

Step 3Add chopped peppers, tomato sauce, sherry and simmer for 10 minutes.

Step 4Fold in heavy cream and simmer for 10 more minutes.

Step 5Salt and pepper to taste.

Step 6Toss in cooked pasta. *Variation: Place finished pasta in greased casserole dish and cover with mozzarella cheese. Cook until cheese is melted. Ready to serve!
