This is one of my favorite family recipes from upstate New York. Its a spicy, creamy take on Italian ziti and fairly easy to put together. My mom makes sure its always on the table at every family get together!

Ingredients

4 Tbsp
olive oil
1/4 c
butter, melted
1 Tbsp
minced garlic
1 medium
onion
2 lb
chicken,cubed
4 oz
hot cherry peppers, canned
1/2 c
tomato sauce
1/4 c
cooking sherry
1 pt
heavy cream
1 lb
rigatoni pasta, cooked

How to Make Chicken Riggies

Step-by-Step

  • 1Saute onion and garlic in oil over medium heat.
  • 2Add uncooked, cubed chicken to onion mixture and cook until tender.
  • 3Add chopped peppers, tomato sauce, sherry and simmer for 10 minutes.
  • 4Fold in heavy cream and simmer for 10 more minutes.
  • 5Salt and pepper to taste.
  • 6Toss in cooked pasta.
    *Variation: Place finished pasta in greased casserole dish and cover with mozzarella cheese. Cook until cheese is melted.
    Ready to serve!
