This is one of my favorite family recipes from upstate New York. Its a spicy, creamy take on Italian ziti and fairly easy to put together. My mom makes sure its always on the table at every family get together!

Ingredients

  • 4 Tbsp
    olive oil
  • 1/4 c
    butter, melted
  • 1 Tbsp
    minced garlic
  • 1 medium
    onion
  • 2 lb
    chicken,cubed
  • 4 oz
    hot cherry peppers, canned
  • 1/2 c
    tomato sauce
  • 1/4 c
    cooking sherry
  • 1 pt
    heavy cream
  • 1 lb
    rigatoni pasta, cooked

How to Make Chicken Riggies

Step-by-Step

  1. Saute onion and garlic in oil over medium heat.
  2. Add uncooked, cubed chicken to onion mixture and cook until tender.
  3. Add chopped peppers, tomato sauce, sherry and simmer for 10 minutes.
  4. Fold in heavy cream and simmer for 10 more minutes.
  5. Salt and pepper to taste.
  6. Toss in cooked pasta.
    *Variation: Place finished pasta in greased casserole dish and cover with mozzarella cheese. Cook until cheese is melted.
    Ready to serve!
