This is one of my favorite family recipes from upstate New York. Its a spicy, creamy take on Italian ziti and fairly easy to put together. My mom makes sure its always on the table at every family get together!

Ingredients

  • 4 tablespoons olive oil
  • 1/4 cup butter, melted
  • 1 tablespoon minced garlic
  • 1 medium onion
  • 2 pounds chicken,cubed
  • 4 ounces hot cherry peppers, canned
  • 1/2 cup tomato sauce
  • 1/4 cup cooking sherry
  • 1 pint heavy cream
  • 1 pound rigatoni pasta, cooked

How To Make chicken riggies

  • Step 1
    Saute onion and garlic in oil over medium heat.
  • Step 2
    Add uncooked, cubed chicken to onion mixture and cook until tender.
  • Step 3
    Add chopped peppers, tomato sauce, sherry and simmer for 10 minutes.
  • Step 4
    Fold in heavy cream and simmer for 10 more minutes.
  • Step 5
    Salt and pepper to taste.
  • Step 6
    Toss in cooked pasta. *Variation: Place finished pasta in greased casserole dish and cover with mozzarella cheese. Cook until cheese is melted. Ready to serve!
