chicken & rice casserole

This is my old stand-by recipe because I know everyone in my family loves it. You can make changes to it as you like.... my daughter adds cooked, cubed potatoes in place of the celery; sometimes I add frozen peas to mine in place of the celery. It's extremely versatile but is perfect for potlucks and family dinners. Not too heavy but still very filling.

Ingredients
- 2 cups long grain wild rice, cooked
- 3 cups chicken, cooked and chopped or shredded
- 2 tablespoons lemon juice
- 1/3 cup almonds, sliced
- 1 1/2 cups celery, chopped
- 1/2 cup onion, chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1/3 cup butter or margarine, melted
- 1 package ritz crackers, crushed
How To Make chicken & rice casserole

Step 1Mix everything together except the butter/margarine and crackers. Transfer to a lightly greased 9x11 baking pan.

Step 2Mix crackers and butter/margarine together in a bowl and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly and browned on top.
