This is my old stand-by recipe because I know everyone in my family loves it. You can make changes to it as you like.... my daughter adds cooked, cubed potatoes in place of the celery; sometimes I add frozen peas to mine in place of the celery. It's extremely versatile but is perfect for potlucks and family dinners. Not too heavy but still very filling.

Ingredients

  • 2 c
    long grain wild rice, cooked
  • 3 c
    chicken, cooked and chopped or shredded
  • 2 Tbsp
    lemon juice
  • 1/3 c
    almonds, sliced
  • 1 1/2 c
    celery, chopped
  • 1/2 c
    onion, chopped
  • 1/2 c
    mayonnaise
  • 1/2 c
    sour cream
  • 1/2 c
    chicken broth
  • 1/3 c
    butter or margarine, melted
  • 1 pkg
    ritz crackers, crushed

How to Make Chicken & Rice Casserole

Step-by-Step

  1. Mix everything together except the butter/margarine and crackers. Transfer to a lightly greased 9x11 baking pan.
  2. Mix crackers and butter/margarine together in a bowl and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly and browned on top.
