chicken & rice casserole

This is my old stand-by recipe because I know everyone in my family loves it. You can make changes to it as you like.... my daughter adds cooked, cubed potatoes in place of the celery; sometimes I add frozen peas to mine in place of the celery. It's extremely versatile but is perfect for potlucks and family dinners. Not too heavy but still very filling.

Ingredients

  • 2 cups long grain wild rice, cooked
  • 3 cups chicken, cooked and chopped or shredded
  • 2 tablespoons lemon juice
  • 1/3 cup almonds, sliced
  • 1 1/2 cups celery, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1/3 cup butter or margarine, melted
  • 1 package ritz crackers, crushed

How To Make chicken & rice casserole

  • Step 1
    Mix everything together except the butter/margarine and crackers. Transfer to a lightly greased 9x11 baking pan.
  • Step 2
    Mix crackers and butter/margarine together in a bowl and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly and browned on top.
