This recipe comes from one of my husband's favorite cookbooks "Casseroles to the Rescue". It's easy and delicious. I found it too salty, so I removed the salt, but you may want to add it back in, per your taste preferences.

Ingredients For chicken quesadillas

2 cchicken, cooked, shredded

3/4 cpicante sauce

3green onions, chopped

1/2 tspground cumin
-
48" flour tortillas
-
margarine, softened

1 cmexican 4-cheese blend

guacamole
How To Make chicken quesadillas

1In a skillet over medium high heat, combine and cook chicken, picante, onions, and cumin for about 5 minutes, just until it is thoroughly hot.

2Brush one side of each tortilla with margarine.

3Place half of the chicken mixture on 1 tortilla, the other half on a second tortilla.

4Sprinkle cheese equally over the two tortillas and place other two tortillas, margarine side down, over cheese.

5Place on lightly greased baking sheet and bake at 400*F for about 10 minutes or until crisp. To serve, cut into wedges. Serve with guacamole.
