chicken quesadillas

This recipe comes from one of my husband's favorite cookbooks "Casseroles to the Rescue". It's easy and delicious. I found it too salty, so I removed the salt, but you may want to add it back in, per your taste preferences.

Ingredients

  • 2 cups chicken, cooked, shredded
  • 3/4 cup picante sauce
  • 3 - green onions, chopped
  • 1/2 teaspoon ground cumin
  • 4 - 8" flour tortillas
  • - margarine, softened
  • 1 cup mexican 4-cheese blend
  • - guacamole

How To Make chicken quesadillas

  • Step 1
    In a skillet over medium high heat, combine and cook chicken, picante, onions, and cumin for about 5 minutes, just until it is thoroughly hot.
  • Step 2
    Brush one side of each tortilla with margarine.
  • Step 3
    Place half of the chicken mixture on 1 tortilla, the other half on a second tortilla.
  • Step 4
    Sprinkle cheese equally over the two tortillas and place other two tortillas, margarine side down, over cheese.
  • Step 5
    Place on lightly greased baking sheet and bake at 400*F for about 10 minutes or until crisp. To serve, cut into wedges. Serve with guacamole.
