I was very ill and on life support in February 2012, when I came home many friends stopped by with meals for my family and I for weeks! And I especially loved this one recipe, but I tweeked it to make it my own.

Ingredients

  • 3 cups chicken breasts diced into medium squares & cooked or 3 cans.
  • 1 1/2 small bags frozen mixed vegetables
  • 1 1/2 sticks butter melted
  • 3/4 cup all purpose flour
  • 1/4 cup minced onion
  • 1 cup heavy cream
  • 1 can chicken broth
  • FIRST SET OF INGREDIENTS IS FOR THE PIE, SECOND SET INGREDIENTS FOR THE TOPPING
  • 1 cup bisquick
  • 1 stick butter melted
  • 1 cup milk

How To Make chicken pot pie

  • Step 1
    Set oven to 400 degrees. Mix together: flour,1 1/2 stks melted butter, minced onion, chicken broth, and heavy cream until smooth.
  • Step 2
    Stir in cooked chicken and mixed vegetables, pour into a 9 x 13 inch baking pan and set aside.
  • Step 3
    Now mix together: bisquick, milk, and 1 stick melted butter.
  • Step 4
    Pour bisquick mixture over the top of the chicken mixture. (DO NOT STIR) Bake in oven 45 minutes, serve hot.
