Ingredients

  • 1 1/4 pounds chicken breast halves, skinless & boneless
  • 1/3 cup italian bread crumbs
  • 1 x large egg
  • 1 tablespoon olive oil, extra virgin
  • 2 tablespoons garlic, minced
  • 1 tablespoon butter
  • 1 - lemon
  • 1 pound crimini &/or button mushrooms (i use both)
  • 2 tablespoons capers (i don't like them, so i don't use them)
  • 1 cup chicken or vegetable broth, low salt
  • 2 teaspoons all purpose flour
  • 1 box angel hair pasta
  • GARNISH:
  • - parsley flakes

How To Make chicken piccata w/ mushrooms on angel hair

  • Step 1
    Bring a large pot of water to a boil & cook pasta according to directions on package.
  • Step 2
    Preheat oven to 350 degrees F.
  • Step 3
    Spread breadcrumbs out on a large plate. Beat egg in a small bowl. Flatten chicken breasts, pounding carefully, to 1/2" thickness using a ziplock bag & a meat mallet or pan.
  • Step 4
    Place the chicken in egg, then breadcrumbs to lightly coat.
  • Step 5
    Heat oil & butter in a large skillet over medium heat. Cook chicken until light brown & cooked through, about 4 minutes each side. Remove chicken from skillet & set in a baking dish & place in oven for 5 minutes while sauce is cooking.
  • Step 6
    In the same skillet where the chicken was cooked, add garlic & stir; cook 1 minute. Add mushrooms & stir; cook 2 - 3 minutes or until mushrooms are browned on both sides.
  • Step 7
    Add flour & stir; mix well. Add chicken broth & stir. Squeeze lemon all over mushrooms; cook until mushrooms are soft & tender, about 2 minutes. Stir in capers, is using.
  • Step 8
    Drain pasta & arrange on plates. Place chicken on top of pasta & spoon sauce & mushrooms over the top of chicken. Garnish with parsley.
