Ingredients

  • 2 pounds chicken breast filets
  • 1 stick butter
  • 3 - lemons
  • 3 tablespoons lemon zest, grated
  • 2 tablespoons capers
  • 1 sprig parsley
  • - salt & pepper to taste
  • 1 cup flour
  • 3 tablespoons olive oil
  • 2 cups white wine

How To Make chicken piccata

  • Step 1
    gently pound chicken fillets, lightly drench in flour
  • Step 2
    in a large skillet, melt 1/4 of the butter stick with some of the olive oil....brown chicken ( about 2 mins on each side)remember chicken should be thin... brown in small batches... keep adding butter & olive oil, as needed
  • Step 3
    after all chicken is browned on each side...place aside...to the butter,olive oil drippings.... add lemon zest, lemon juice, capers parsley & white wine....scrape bottom of pan...(that's where all the flavor is)...place browned chicken fillets back and simmer for like 20 mins... so all the flavors marry
