Ingredients
- 2 pounds chicken breast filets
- 1 stick butter
- 3 - lemons
- 3 tablespoons lemon zest, grated
- 2 tablespoons capers
- 1 sprig parsley
- - salt & pepper to taste
- 1 cup flour
- 3 tablespoons olive oil
- 2 cups white wine
How To Make chicken piccata

Step 1gently pound chicken fillets, lightly drench in flour

Step 2in a large skillet, melt 1/4 of the butter stick with some of the olive oil....brown chicken ( about 2 mins on each side)remember chicken should be thin... brown in small batches... keep adding butter & olive oil, as needed

Step 3after all chicken is browned on each side...place aside...to the butter,olive oil drippings.... add lemon zest, lemon juice, capers parsley & white wine....scrape bottom of pan...(that's where all the flavor is)...place browned chicken fillets back and simmer for like 20 mins... so all the flavors marry
