This is super lemony, I love lemon, yummo!! If your looking for something a little special to make this is a winner :) ENJOY!

Ingredients

  • 3 large chicken breast halves, skinless and boneless sliced into 1/2 inch fillets
  • - salt and pepper to taste
  • 1/2 cup flour
  • 3 tablespoons butter, for frying chicken (more as needed)
  • 1 large clove of garlic, minced
  • 1 cup chicken broth
  • 1/4 cup lemon juice, fresh
  • 1/2 - lemon, sliced thinly
  • 2 tablespoons capers
  • 3 tablespoons butter, for sauce
  • 2 tablespoons parsley, fresh chopped

How To Make chicken piccata

  • Step 1
    pound chicken between a sheet of plastic wrap until thin, (not paper thin) just enough to fry up quickly
  • Step 2
    melt butter in frying pan
  • Step 3
    season chicken with salt and pepper, and dredge them in flour shake off extra flour
  • Step 4
    fry chicken until golden brown on both sides, work in batches and do not crowd pan. (I place chicken on a paper towel lined plate and keep it the microwave until all chicken is fried)
  • Step 5
    after all chicken is fried, drain any extra butter but leaving all the brown bits in the pan, stir in garlic and cook for about 20 second. Pour in chicken broth. Scrape the bottom of the pan so to get all the brown bits off the bottom of the skillet. Stir in lemon slices and bring to a boil. Let it cook until it reduces down and starts to thicken. Add lemon juice and capers and reduce until sauce starts to thicken slightly, add butter stir sauce until butter is melted. remove from heat add parsley.
  • Step 6
    I serve with pasta, place cooked pasta on plate place chicken pieces over pasta then pour sauce over chicken. ENJOY!!
