chicken piccata
This is a very simple recipe given to me by my best friend. It is so tasty, I give this recipe to all the new brides when I go to their bridal showers. It is always a huge success!

Ingredients
- 1 pound chicken breasts, boneless and skinless, sliced thin
- 1 cup flour, seasoned with salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons butter, melted
- 2 cloves garlic, minced
- 1 can 4oz - sliced mushrooms
- 2 tablespoons lemon juice, or juice from 2 fresh lemons
- 1/2 cup white wine - i use pinot grigio
- 1/2 cup chicken broth, as needed
How To Make chicken piccata

Step 1In a large skillet, drizzle olive oil and melted butter,over low heat, be careful not to burn the butter.

Step 2Dredge chicken cutlets in seasoned flour, and put in pan. Cook 2-3 minutes on each side, until lightly browned. Remove cooked chicken to warm plate.

Step 3If necessary, add a little more butter to skillet, and saute minced garlic and sliced mushrooms. Cook for 2 minutes. Add lemon juice and white wine.

Step 4Add chicken cutlets back to pan, add chicken broth, and cover pan. Simmer chicken for 10 minutes. Sprinkle with parsley for garnish, and serve with rice and vegetable. Enjoy!
