This is a very simple recipe given to me by my best friend. It is so tasty, I give this recipe to all the new brides when I go to their bridal showers. It is always a huge success!

Ingredients

  • 1 pound chicken breasts, boneless and skinless, sliced thin
  • 1 cup flour, seasoned with salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 can 4oz - sliced mushrooms
  • 2 tablespoons lemon juice, or juice from 2 fresh lemons
  • 1/2 cup white wine - i use pinot grigio
  • 1/2 cup chicken broth, as needed

How To Make chicken piccata

  • Step 1
    In a large skillet, drizzle olive oil and melted butter,over low heat, be careful not to burn the butter.
  • Step 2
    Dredge chicken cutlets in seasoned flour, and put in pan. Cook 2-3 minutes on each side, until lightly browned. Remove cooked chicken to warm plate.
  • Step 3
    If necessary, add a little more butter to skillet, and saute minced garlic and sliced mushrooms. Cook for 2 minutes. Add lemon juice and white wine.
  • Step 4
    Add chicken cutlets back to pan, add chicken broth, and cover pan. Simmer chicken for 10 minutes. Sprinkle with parsley for garnish, and serve with rice and vegetable. Enjoy!
