I also add some pine nuts at the end if I happen to have any on hand. It is also one of the only ways I can get my family to eat spinach.

Ingredients

  • 1 1/2 cups multigrain pasta (i typically like to use bowtie pasta)
  • 1 package spinach (9oz)
  • 1 pound chicken breast, diced into pieces
  • 1 teaspoon dried basil leaves (or more)
  • 1 jar spaghetti sauce
  • 1 can diced tomatoes, drained
  • 3 ounces cream cheese
  • 1 cup shredded mozzella
  • 2 tablespoons parmesan

How To Make chicken penne pasta bake

  • Step 1
    Heat oven to 375. Cook pasta adding spinach at the last one minute of cooking.
  • Step 2
    Cook chicken and basil in large skillet. Add spaghetti sauce, and tomatoes; bring to a boil. Simmer 3 minutes and stir in cream cheese until melted.
  • Step 3
    Drain pasta, return to pan. Stir in chicken mixture and 1/2 cup mozzarella. Pour into 2 qt. casserole. Bake for 20 minutes and sprinkle with remaining cheese until melted.
