I found a version of this recipe in a food magazine and adapted it to be my own. It's a Family Night Dinner favorite alternative to grilled chicken.

Ingredients
- 1 pound ground chicken or turkey
- 1 - egg, slightly beaten
- 1 teaspoon spicy brown or dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 1/2 tablespoons minced dried onion
- 2 tablespoons dried parsley
- 1/3 cup mayonnaise
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 - sleeve of buttered cracker rounds, crushed

How To Make chicken patties

Step 1Preheat oven to 350 degrees.

Step 2In a large bowl, combine first 9 ingredients and 1/3 cup cracker crumbs; mix well with a fork. Mixture will be extremely wet. Form chicken mixture into 6 patties. Coat each patty in remaining cracker crumbs. Place patties on a plate, cover with wax paper and refrigerate for about 20 minutes.

Step 3Spray an oven proof skillet with cooking spray and heat to medium high heat. Add chicken patties and cook on each side for 2 minutes to brown. Move skillet to the oven and continue to cook patties for approximately 20 additional minutes or until chicken is no longer pink.
