My family loves Italian food and I love to make it for them. Of all the Italian dishes I make, this is my favorite. I hope you enjoy it! Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter or omit ingredients as I cook. Therefore, it has always been a challenge when sharing recipes with others. I doubt I make dishes the same way twice. So, I advise you to use my recipes the same way. Ingredients

  • 2 cloves garlic, minced
  • 1 stick butter, melted
  • 1 cup panko bread crumbs
  • 1/3 cup parmesan cheese, grated
  • t tablespoon fresh parsley or 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 2 pounds boneless, skinless, chicken breast
  • - (pound breast with mallet to 1/4 inch thick)
  • SAUCE
  • 2 cloves garlic, minced
  • 1/4 cup olive oil, extra virgin
  • 28 ounces crushed tomatoes, canned
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon brown sugar
  • - salt and pepper to taste
  • TOPPING
  • 1-2 cup mozzarella cheese, shredded
  • - sprinkle with dried parsley

How To Make chicken parmigiana~robynne

  • Step 1
    Preheat oven to 450F degrees
  • Step 2
    Combine: minced garlic and melted butter in a bowl; set aside. In another bowl mix bread crumbs, parsley and next 10 ingredients.
  • Step 3
    Dip chicken breast in butter and garlic mixture and then in bread crumb mixture.
  • Step 4
    Arrange in 9 X 13 baking dish; leaving room between pieces. Drizzle with remaining butter and garlic mixture.
  • Step 5
    Bake 20 minutes or until chicken is cooked through and juices run clear. In the meantime make sauce by combining ingredients and simmering for 10 minutes. Remove from heat and set aside.
  • Step 6
    When chicken is crispy and cooked through, spoon sauce on top of chicken. Now top with mozzarella cheese and parsley.
  • Step 7
    Broil for 3-5 minutes until cheese is bubbly and begins to brown. Remove from oven and serve with your favorite pasta and remaining sauce.
