This recipe came from an old church cookbook back in the 1960s. I have used it a lot since that time and it is a good one for a potluck, picnic, etc. since you can make it ahead. It is good cold or hot.

Ingredients

  • 1 - chicken broiler/fryer cut up
  • 1 cup flour
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1/4 teaspoon pepper
  • 2 - eggs
  • 3 tablespoons milk
  • 2/3 cup parmesan cheese
  • 1/3 cup bread crumbs

How To Make chicken parmesan

  • Step 1
    In a shallow bowl, combine the flour, salt, paprika and pepper.
  • Step 2
    In another shallow bowl, beat the eggs and milk.
  • Step 3
    In a third bowl, combine the Parmesan cheese and bread crumbs.
  • Step 4
    Coat chicken pieces with flour mixture, dip in egg mixture, then roll in crumb mixture.
  • Step 5
    Place chicken pieces in a well greased 15x10x1" baking pan.
  • Step 6
    Bake at 400 degrees for 50 to 55 minutes or until chicken juices run clear.
