chicken parmesan

Just a little recipe I threw together with some ingredients I had on hand. Turned out real nice and tasty so I thought I would share.

Ingredients

  • SAUCE
  • - 1 15 oz can tomato sauce
  • - 1/2 cup white wine
  • - 1/2 15 oz can diced tomato
  • - 1/4 cup diced onion
  • - 1 garlic bundle (peeled & roasted)
  • - fresh parsley
  • - fresh basil
  • - olive oil
  • - 1 tsp oregano
  • - salt and pepper
  • CHICKEN
  • - 2 chicken breasts (butterfly)
  • - 2 eggs
  • - 1/2 cup parmesan cheese
  • - 1 cup italian bread crumbs
  • - olive oil
  • - mozzarella cheese (shredded)

How To Make chicken parmesan

  • Step 1
    Sauce:Preheat oven to 400 degrees. Place garlic cloves on foil with some olive oil and roast for about 10-15 minutes or until brown. (turn oven down to 350 degrees for later) Add about a tbsp of olive oil to a small pot and toss in onions, salt and pepper on medium heat. Let simmer for about 5 minutes then add wine. Simmer for another 5 minutes and then add diced tomatoes, roasted garlic, tomato sauce, and oregano, basil, and parsley. Turn heat down to low and cover.
  • Step 2
    Chicken: Clean, and butterfly the chicken breasts. Beat two eggs in a bowl. Add about 1 cup of bread crumbs and 1/2 cup Parmesan to another bowl and mix together. Heat a few tbsp of olive oil in a skillet on medium. Dredge chicken in egg mixture then bread crumb mixture and place in the frying pan. Brown for about 5 minutes on each side. Remove chicken from skillet and drain on a paper towel.
  • Step 3
    In a baking pan top chicken with sauce and shredded cheese. Place in the oven for 25-30 minutes. Mix remaining sauce with pasta.
