chicken parm soup

Mmm Mmm good!! I found this when we were living in a hotel (long story) and we didn't have an oven to cook with. You'll need some kind of microwave safe deep covered baker. I have the one from the Pampered Chef. This recipe is also from the Pampered Chef. If you have that then this whole recipe can be done in the microwave. So easy, so fast, so good. Great family dinner, great for busy moms like me.

Ingredients

  • 3 cloves garlic, minced or pressed
  • 1 1/2 cups chicken stock
  • 4 ounces french bread loaf, cubed 3/4 in.
  • 2 cups shredded mozzarella
  • 1 ounce grated parmesan
  • 2 1/2 cups cooked chicken, cubed
  • 1 can diced tomatoes with garlic and onion
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 2 tablespoons garlic powder, divided
  • 2 tablespoons italian seasoning, divided

How To Make chicken parm soup

  • Step 1
    Toss bread cubes, oil, 1 TB garlic powder, and 1 TB Italian seasoning. Microwave cubes in a microwave-safe deep baker for 4 minutes, stirring every minute, until they start to brown. Let cool on paper towel.
  • Step 2
    Stir stock, remaining seasoning and garlic powder, marinara, tomatoes, chicken and garlic together in baker. Microwave covered for 13 minutes.
  • Step 3
    Remove from microwave. Stir in Parmesan. Top soup with half the mozzarella, then bread cubes, then top with remaining mozzarella. Cover again and let stand for two minutes. Enjoy!
