Blue Ribbon Recipe

If you love chicken Parmesan, you have to try this delicious casserole. Crispy, fried chicken cutlets are layered with frozen ravioli, tomato sauce, and lots of cheese. The ravioli cooks in the sauce, creating a tasty and filling meal. It's a fun casserole twist to chicken Parm. Frying the chicken cutlets does take a little time, so we suggest reserving this casserole recipe for the weekends or when you have a little extra time.

How To Make chicken parm-avioli

  • Slice chicken breasts in half and pound thin.
    Step 1
To make the chicken Parmesan part: Slice the chicken lengthwise to about 1/4 inch thickness. If necessary, pound the chicken to get it to this thickness. I also cut my chicken into 2x2-inch pieces.
  • 1 bowl, put flour, salt, pepper, and garlic powder, and stir. In another bowl, put eggs and water. In the 3rd bowl, add bread crumbs.
    Step 2
You will need 3 separate, shallow bowls. In 1 bowl, put flour, salt, pepper, and garlic powder, and stir. In another bowl, put eggs and add about 2-3 Tbsps of water; beat well. In the 3rd bowl, add bread crumbs.
  • Heat oil in a skillet.
    Step 3
Heat a skillet with about 1/2 inch of oil over medium heat.

  • Then dip in the bread crumbs.
    Step 6
    Then in the bread crumbs.
  • Fry the chicken cutlets.
    Step 7
The chicken will cook quickly due to the thickness of the pieces. Don't overcook. 2-3 minutes on each side; it will be baked later. You may need to add more oil as you go.
  • Spray a baking dish and add some tomato sauce.
    Step 8
While you are cooking the chicken, preheat the oven to 350 degrees F. Spray a deep-sided 2-3 quart casserole pan with cooking spray. Spread 1/4 cup - 1/2 cup of sauce on the bottom of the pan.
  • Lay down a layer of ravioli, sauce, and cheese.
    Step 9
Lay down a layer of ravioli on top of the sauce. Put a spoonful of sauce on top of each ravioli. Sprinkle with Parmesan and 1/3 of the mozzarella.
  • Add the cooked chicken, spoon some sauce, and sprinkle cheese.
    Step 10
Add the cooked chicken in a single layer, cutting to fit if necessary. Spoon some sauce onto each piece of chicken. Sprinkle on some more parmesan and 1/3 of the mozzarella.
  • Add another layer of the ravioli.
    Step 11
Add another layer of the ravioli.
  • Top the ravioli with the remaining sauce.
    Step 12
Top the ravioli with the remaining sauce.
  • Cover with more cheese and bake.
    Step 13
Add more mozzarella and Parmesan cheese. Cover casserole with foil. Bake at 350 degrees for 20 minutes. Uncover and top with remaining cheese. Bake for 5 minutes more.
