These are yummy!! I always double the recipe and have four to six friends over!!

Ingredients

  • 1 1/2 pounds boneless chicken breast or skirt steak
  • 1 cup vegetable oil
  • 1 - limed, halved
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 - garlic powder
  • 1 each - green bell pepper & red bell pepper, sliced
  • 2 large - onions, sliced
  • 2 tablespoons taco seasoning mix
  • 1 - avocado, sliced
  • 20 - pre made flour tortillas

How To Make chicken or beef fajitas

  • Step 1
    Prepare chicken or beef by slicing raw meat into 3 to 4 inch strips. I place chicken strips in one zip top bag and beef in another.
  • Step 2
    Add salt, pepper, garlic powder, and 1 tbsp. taco seasoning mix. Pour in 1/2 cup veggie oil, close bag and massage bag to coat each piece of chicken or beef with the oil or seasonings. Allow to marinate for up to 4 hour.
  • Step 3
    Saute' veggies in a well seasoned, hot, oiled skillet. Sprinkle with one tsp. of taco seasoning, salt and pepper. Cook until veggies are limp. Remove from pan, keep warm.
  • Step 4
    Remove chicken or beef from bag, leaving behind the seasoned oil, discard bags. Put chicken or beef in a well seasoned, oiled skillet until done, allowing chicken to lightly brown.
  • Step 5
    Place hot veggies and meats on a warm platter garnished with avocado slices and squeeze lime halves over all.
  • Step 6
    Serve with warm flour tortillas, Spanish rice, pinto beans, and guacamole salad.
