Ingredients

  • 2 cups chicken, cooked and chopped
  • 2 cups rice, cooked
  • 1 can cream of chicken soup
  • 3/4 cup mayonnaise, light
  • 1 can water chestnuts, drained
  • 1/2 cup chopped onion
  • 1 teaspoon lemon juice
  • 1/2 cup slivered almonds
  • 2 cups corn flake cereal, crushed
  • 1 stick margarine

How To Make chicken olivia

  • Step 1
    Preheat oven to 375.
  • Step 2
    Mix chicken, rice, soup, mayonnaise, water chestnuts, onion and lemon juice in 9x13\" dish. (Optional: Add 3 chopped hard-boiled eggs.)
  • Step 3
    Bake 30 minutes.
  • Step 4
    Meanwhile, melt margarine in saucepan.
  • Step 5
    Stir in cornflake crumbs and almonds.
  • Step 6
    Spread topping on casserole.
  • Step 7
    Bake another 15 minutes.
