- 2 cups rice, cooked
- 1 can cream of chicken soup
- 3/4 cup mayonnaise, light
- 1 can water chestnuts, drained
- 1/2 cup chopped onion
- 1 teaspoon lemon juice
- 1/2 cup slivered almonds
- 2 cups corn flake cereal, crushed
- 1 stick margarine

Step 1Preheat oven to 375.

Step 2Mix chicken, rice, soup, mayonnaise, water chestnuts, onion and lemon juice in 9x13\" dish. (Optional: Add 3 chopped hard-boiled eggs.)

Step 3Bake 30 minutes.

Step 4Meanwhile, melt margarine in saucepan.

Step 5Stir in cornflake crumbs and almonds.
