chicken noodle soup...quick and easy
I took my StepMom to the doctor yesterday, so as I was setting in the waiting room reading magazines, I found this recipe in a small free pamplet called "NWA Seniors Out-n-About". It was a December 2011 issue. BUT, putting it in my words!!! Thought to myself, for a quickie this sounds pretty good. Could easly change it up using turkey, ham...etc.

Ingredients
- 1 tablespoon butter
- 1 cup chopped celery
- 3 1/2 cups chicken broth
- 1/4 teaspoon pepper
- 1 pound skinned chicken, cubed (i'm thinking cooked although they did not say so)
- 1 cup chopped carrot
- 1 tablespoon flour
- 1/2 teaspoon salt
- 2 cups uncooked egg noodles
- 1 cup water
How To Make chicken noodle soup...quick and easy

Step 1Melt butter in a large heavy pot, over medium-high heat.

Step 2Add carrots & celery; then sauté for 3 minutes.

Step 3Stir in the flour and cook, stirring, for about 1 minute.

Step 4Remove from heat and gradually stir in the broth, water, salt and pepper.

Step 5Return to heat, and bring to a full boil.

Step 6Cover; reduce heat and let simmer 5 minutes.

Step 7Add in the noodles and chicken, then bring back to a full boil.

Step 8Cover, reduce heat, and simmer 10 minutes...be sure to Enjoy with your favorite crackers or a hot loaf of bread from the oven!!!
