1Place the egg in a shallow dish. Place the bread crumbs in another shallow dish. Dip the chicken in the egg then in the bread crumbs, coating completely.
2In a large skillet, heat the oil over medium heat. Cook the chicken for 4 to 5 minutes per side, or until no pink remains.
3Remove the chicken to a serving platter and cover to keep warm. Add the spaghetti sauce, water, mushrooms, and noodles (seasoning packet reserved for another use) to the skillet. Cook for 4 to 5 minutes, or until the noodles are tender, stirring occasionally.
4Reduce the heat to medium-low and return the chicken to the skillet, placing it over the noodles. Sprinkle the chicken with the mozzarella cheese. Cover and cook for 4 to 5 minutes, or until chicken is heated through and the cheese is melted.
