Nachos are a family favorite for us. I always keep the fixings on hand for those random "nacho attacks" that seem to happen quite often. Ground beef can be used as well, but we prefer the chicken.

Ingredients

  • 2 cups cooked, diced or shredded chicken
  • 8 ounces mexican blend shredded cheese
  • 8 ounces mushrooms, fresh, sliced
  • 24 ounces salsa, chunky
  • 1 package taco seasoning mix
  • 1 package tortilla chips, whatever kind you like

How To Make chicken nachos

  • Step 1
    In a large pan, combine salsa, chicken, mushrooms and seasoning. Turn heat to low and simmer for 10 minutes or so, until mushrooms have softened and the mixture is heated through. (If the salsa has minimal liquid, you can add some water to the mix to keep it from scorching.)
  • Step 2
    Spread a handful of tortilla chips on a microwave/oven safe plate. Spoon the salsa mixture over the chips. Sprinkle with the shredded cheese.
  • Step 3
    Melt the cheese in the microwave or under the broiler. Serve with an assortment of toppers such as sour cream, guacamole, olives, chiles, etc.
