Ingredients
- 1 tablespoon olive oil
- 1 medium onion chopped
- 8 ounces white mushrooms chopped
- 2 cloves garlic minced
- 2 cups leftover rotisseri chicken shredded
- 1 teaspoon each cumin, chili powder
- cup salt and pepper
- 1 1/2 cups sharp cheddar cheese
- 4 10 inch flour tortillas.
- salsa and sour cream for serving
How To Make chicken mushroom quesadillas

Step 1Heat the oil in a large skillet. Add the onion and the mushrooms and cook until the mushrooms are beginning to brown. Add the garlic and cook 30 seconds. Stir in the chicken, cumin and chili powder. Season with salt and pepper

Step 2Lay the 4 tortillas out flat on a counter. Add some cheese to each one then equally divide the chicken mixture then top with the rest of the cheese.

Step 3Fold the tortillas in half. Spray a large skillet with cooking spray and add the tortillas halves. Should be able to put two in a pan at a time. Cook until browned on each side turning once about 4 minutes per side. Remove to a plate and cut into pieces. Serve with sour cream and salsa.
