Ingredients

  • 3 lb
    chicken, broiler-fryer
  • 2
    celery ribs, sliced
  • 2
    chopped onions
  • 1 tsp
    salt
  • 1/2 c
    chicken broth
  • 6 oz
    tomato paste
  • 1/4 c
    dry sherry
  • 1 tsp
    oregano
  • 1 lb
    mushrooms, sliced
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 1/2 c
    heavy cream

How to Make Chicken Mushroom Pasta Sauce

Step-by-Step

  1. Place fryer in crock-pot with celery, onions and salt and combine chicken broth with tomato paste and pour over ingredients in crock-pot.
  2. Add sherry, oregano and mushrooms; stir to moisten all ingredients.
  3. Cover and cook on low for 8 to 10 hours or on high for 3 1/2 to 5 hours.
  4. Remove chicken; bone meat and dice.
  5. Return meat to crock-pot.
  6. Knead butter and flour together and add with cream; stir well.
  7. Cover and cook on high for 30 minutes to 1 1/2 hours or on low for 3 to 5 hours.
