Ingredients
- 4 - boneless skinless chicken thighs cut into strips
- - salt
- 3 tablespoons butter
- 8 ounces button baby bella mushrooms stems removed
- 8 cloves garlic minced
- 1 cup chicken broth
- 1/2 cup white wine
- 3 tablespoons butter
- 1/4 cup fresh parsley chopped
- 8 ounces angel hair pasta cooked in salted boiling water drained reserving 1/2 cup pasta liquid
- - parmesan cheese for serving
How To Make chicken & mushroom pasta in a garlic wine sauce

Step 1Add 3 tbsp butter to large saute pan. Let it melt over med. high heat. Add the chicken pieces in a single layer and sprinkle with salt. Cook until chicken is browned on both sides. Remove with slotted spoon to a plate and set aside.

Step 2Leave the fat in the pan and add the mushrooms and cook until they have released their moisture about 5 minutes. Add the garlic and cook 1 more minute. Make sure to not burn the garlic. Add the wine and deglaze the pan scrapping up the bits on bottom of pan. Add the chicken broth and bring to a boil. Add the chicken and and juices back to the pan. Add the reserved pasta water. Bring to a simmer and simmer about 10 minutes until the sauce is reduces. Stir in the remaining 3 tbsp. butter and the parsley. Turn the heat to low and stir in the angel hair pasta and let it absorb some of the sauce.

Step 3Serve with fresh grated Parmesan cheese
