Ingredients
- 4 small boneless skinless chicken breasts
- - salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 package (8 oz.) sliced, fresh mushrooms
- 2 cloves garlic, minced
- 2 1/2 cups chicken stock (not broth) separate 1/2 cup
- 1/3 cup all purpose flour
- 2 tablespoons chopped fresh parsley
How To Make chicken & mushroom gravy from the instant pot!

Step 1Select the SAUTE button on your Instant Pot. Heat the olive oil.

Step 2Salt and pepper chicken breasts on both sides to taste.

Step 3Brown chicken breasts on both sides. Remove chicken from pot. Set aside, keep warm.

Step 4Add 1 Tbsp. butter to pot, mushrooms and garlic. Saute until mushrooms are beginning to soften.

Step 5Press CANCEL on Instant Pot.

Step 6Place chicken back in the Instant Pot

Step 7Pour in 2 cups of chicken stock.

Step 8Cover and lock the lid. Make sure the steam releasing handle is pointing to sealing.

Step 9Cook on HIGH pressure for 10 minutes.

Step 10When cooking time is finished, use quick release. When pressure is released, remove lid.

Step 11Remove chicken breasts to a serving platter, keep warm.

Step 12Select the saute button on your Instant Pot. Bring broth back to a simmer.

Step 13Whisk together flour and remaining 1/2 cup chicken stock until it makes a thin paste (flour slurry)

Step 14Add in flour slurry to the pot and stir until broth is thickened.

Step 15Press CANCEL on Instant Pot.

Step 16Ladle gravy over chicken breasts and sprinkle with fresh parsley.

Step 17Serve with mashed potatoes, pasta or rice!
