whole wheat bread crumbs
1 Tbsp
parsley, fresh minced
1/4 c
wheat germ
1 tsp
dried basil
chicken breast halves, skinless and boneless
5/8 tsp
1 tsp
dried oregano
1/2 c
skim milk
2 tsp
minced garlic cloves
2 tsp
sesame oil
1/2 c
shredded mozzarella cheese
8 oz
tomato sauce

How to Make Chicken Mozzarella


  • 1Combine breadcrumbs and wheat germ, set mixture aside.
  • 2Trim excess fat from chicken.
  • 3Place chicken between 2 sheets waxed paper and flatten to 1/4 inch thickness, using a rolling pin or meat mallet.
  • 4Dip chicken in milk, dredge in bread crumb mixture.
  • 5Coat a large skillet with cooking spray.
  • 6Add oil and place over medium hot heat until hot.
  • 7Add chicken to skillet and cook until browned on both sides.
  • 8Drain on paper towels.
  • 9Pour one third of tomato sauce in bottom of a 13 X 9 X 2 inches casserole dish.
  • 10Baking dish coated with cooking spray.
  • 11Place chicken breasts in dish.
  • 12Pour half of remaining tomato sauce over chicken; sprinkle with parsley, basil, oregano, pepper, garlic and cheese.
  • 13Top with remaining tomato sauce.
  • 14Bake at 350 for 30 minutes.
