Ingredients

  • 6 - chicken cutlets
  • 1 cup flour
  • 1/2 cup parmesan cheese
  • 1/2 cup sun dried tomatoes, diced
  • 1/2 cup basil, fresh chopped
  • 1 cup baby portebello mushrooms, sliced
  • 6 slices mozzarella cheese
  • 6 slices black forest ham
  • 1/2 stick butter
  • 2 tablespoons olive oil
  • - salt/pepper to taste

How To Make chicken milano with a twist

  • Step 1
    in a shallow dish, combine flour & parmesan cheese,lightly coat each chicken cutlet
  • Step 2
    in a skillet, put 1 tablespoon of butter (and a drizzle of olive oil)this will prevent the butter from burning..cook the chicken cutlets about 2-3 mins on each side (till golden brown) do in batches, set aside
  • Step 3
    meanwhile,clean and slice the portabello mushrooms,in the same pan, after you finish with all the chicken saute the mushrooms, about 2 mins
  • Step 4
    time to assemble....place each chicken cutlet on a oven friendly platter...top each one equally with the sun-dried tomatoes,basil, mushrooms then top each with a slice of black forest ham and mozzarella...melt in oven, I served it with orzo pasta w/parmesan cheese mmmmm
