From a very old cookbook I've had around 30 years.

Ingredients

  • 4 - boneless skinless chicken breasts
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon peper
  • 1/2 teaspoon oregano, dried
  • 4 tablespoons butter
  • 4 tablespoons oil
  • 1/2 cup fresh mushroms
  • 1/2 cup marsala wine
  • 2 cups cooked pasta (your choice)

How To Make chicken marsala

  • Step 1
    Place chicken between 2 pieces of plastic wrap and pound to 1/4 inch thick. Combine flour, salt, pepper and oregano and mix well. Heat the oil and butter in a skillet over medium to high heat. Dredge chicken in flour mixture.
  • Step 2
    Place chicken in skillet until brown on one side (about 2 minutes) turn over and add mushrooms around the chicken in skillet. Cook until chicken is cooked through about 3 to 5 minutes. Stir the mushrooms and and wine. Cover and simmer for 10 minutes.
  • Step 3
    Pour over pasta (I prefer vermacelli)
