    chicken cutlets
  • 2 c
  • 1 pkg
    portobello mushrooms, cleaned and sliced
  • 2
    shallots, thinly sliced
  • 1 bottle
    dry marsala wine
  • 1 stick
  • 2 Tbsp
    olive oil

How to Make Chicken Marsala


  1. salt/pepper the chicken cutlets, put flour on a plate and lightly flour both sides of cutlets.
  2. in a large skillet, on med-high put about a teaspoon of the butter and a little bit of olive oil ( so butter doesn't burn)...gently brown both sides of the cutlets, do in batches and place on a platter.
  3. after all the cutlets are out, saute the mushrooms and shallots...pour in the bottle of marsala wine and reduce about 5 mins of a semi-boil...add a tablespoon of butter, gentle stir another 5 mins...and pour over cutlets...
  4. serve over garlic mashed potatoes and your choice of veggie...yummy
