Ingredients

  • 3 pounds chicken cutlets
  • 2 cups flour
  • 1 package portobello mushrooms, cleaned and sliced
  • 2 - shallots, thinly sliced
  • 1 bottle dry marsala wine
  • 1 stick butter
  • 2 tablespoons olive oil
  • - salt/pepper

How To Make chicken marsala

  • Step 1
    salt/pepper the chicken cutlets, put flour on a plate and lightly flour both sides of cutlets.
  • Step 2
    in a large skillet, on med-high put about a teaspoon of the butter and a little bit of olive oil ( so butter doesn't burn)...gently brown both sides of the cutlets, do in batches and place on a platter.
  • Step 3
    after all the cutlets are out, saute the mushrooms and shallots...pour in the bottle of marsala wine and reduce about 5 mins of a semi-boil...add a tablespoon of butter, gentle stir another 5 mins...and pour over cutlets...
  • Step 4
    serve over garlic mashed potatoes and your choice of veggie...yummy
