3 lbchicken cutlets
1 pkgportobello mushrooms, cleaned and sliced
2shallots, thinly sliced
1 bottledry marsala wine
2 Tbspolive oil
How to Make Chicken Marsala
- salt/pepper the chicken cutlets, put flour on a plate and lightly flour both sides of cutlets.
- in a large skillet, on med-high put about a teaspoon of the butter and a little bit of olive oil ( so butter doesn't burn)...gently brown both sides of the cutlets, do in batches and place on a platter.
- after all the cutlets are out, saute the mushrooms and shallots...pour in the bottle of marsala wine and reduce about 5 mins of a semi-boil...add a tablespoon of butter, gentle stir another 5 mins...and pour over cutlets...
- serve over garlic mashed potatoes and your choice of veggie...yummy
