chicken cutlets
2 c
1 pkg
portobello mushrooms, cleaned and sliced
shallots, thinly sliced
1 bottle
dry marsala wine
1 stick
2 Tbsp
olive oil

How to Make Chicken Marsala


  • 1salt/pepper the chicken cutlets, put flour on a plate and lightly flour both sides of cutlets.
  • 2in a large skillet, on med-high put about a teaspoon of the butter and a little bit of olive oil ( so butter doesn't burn)...gently brown both sides of the cutlets, do in batches and place on a platter.
  • 3after all the cutlets are out, saute the mushrooms and shallots...pour in the bottle of marsala wine and reduce about 5 mins of a semi-boil...add a tablespoon of butter, gentle stir another 5 mins...and pour over cutlets...
  • 4serve over garlic mashed potatoes and your choice of veggie...yummy
