How to Make Chicken Marsala
1Combine flour, salt, pepper, & paprika.
2Cut chicken into bite size pieces. Dredge in flour. Sprinkle with a pinch of oregano.
3In a heavy iron skillet, heat olive oil with butter. Brown chicken about 5 minutes on each side.
4Add carrots, mushrooms, marsala wine & chicken broth.
5Lower heat, cover & simmer for 30 minutes. Serve with brown rice.
