Ingredients
- 2 jars 12 oz. jar marinated artichokes, coarsely chopped
- 4 cups chicken breast, cooked and cubed
- 2 cans cream of chicken soup
- 1/2 cup milk
- 1 cup mayo
- 1 teaspoon fresh lemon juice
- 1 teaspoon curry powder (or more to taste)
- 1 1/4 cups sharp cheddar cheese, shredded
- 1/2 - 1 pounds mushrooms, sauteed in butter until golden brown
- 2 cups rice, cooked
- 3/4 cup bread crumbs, seasoned
- 2 tablespoons butter, melted
- parmesan cheese to sprinkle on top
How To Make chicken & marinated artichoke casserole

Step 1Drain artichokes well and coarsely chop. Add them to the bottom of a 9 x 13 baking pan.

Step 2Next, layer rice and chicken on top of artichokes.

Step 3Saute mushrooms in a little butter until they have released their juices and are light golden brown. Add them on top of chicken and rice.

Step 4Mix together soup, milk, mayo, lemon juice, curry powder and 3/4 cup of the cheese. Mix thoroughly. Pour mixture over the mushrooms and sprinkle remaining cheddar cheese on top.

Step 5Toast bread crumbs in melted butter and toss with parmesan cheese -- spread on top of casserole.

Step 6Bake at 350 degrees for 30 minutes.
