Ingredients
- 2 tablespoons butter, room temperature
- 1/4 cup flour
- 2 cups light cream
- 1 1/2 cups to 2 cups chicken broth
- 3/4 pound velveeta, cubed
- 2 - 7 oz boxes elbow macaroni, cooked & drained
- 3 cups cubed cooked chicken
- 1 - 2 oz pimiento, drained
- 1 teaspoon salt
- 1/2 teaspoon pepper
How To Make chicken macaroni casserole

Step 1Preheat oven to 350 degrees.

Step 2In Large saucepan, melt butter. Stir in flour until combined.

Step 3Add cream and 1 1/2 cups broth all at once; stir til smooth. Cook and stir til thickened & bubbly;cook & stir 2 minutes more.

Step 4Remove from heat; add cheese & stir til melted.

Step 5Stir in Macaroni, chicken, pimiento, salt & pepper. Add additional broth if needed.

Step 6Pour into 3 quart baking dish and bake uncovered for 40 minutes or til heated through.
