Ingredients

  • 2 Tbsp
    butter, room temperature
  • 1/4 c
    flour
  • 2 c
    light cream
  • 1 1/2 c
    to 2 cups chicken broth
  • 3/4 lb
    velveeta, cubed
  • 2
    7 oz boxes elbow macaroni, cooked & drained
  • 3 c
    cubed cooked chicken
  • 1
    2 oz pimiento, drained
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How to Make Chicken Macaroni Casserole

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. In Large saucepan, melt butter. Stir in flour until combined.
  3. Add cream and 1 1/2 cups broth all at once; stir til smooth. Cook and stir til thickened & bubbly;cook & stir 2 minutes more.
  4. Remove from heat; add cheese & stir til melted.
  5. Stir in Macaroni, chicken, pimiento, salt & pepper. Add additional broth if needed.
  6. Pour into 3 quart baking dish and bake uncovered for 40 minutes or til heated through.
