Loved this casserole! Haven't made it in forever!!

Ingredients

  • 2 tablespoons butter, room temperature
  • 1/4 cup flour
  • 2 cups light cream
  • 1 1/2 cups to 2 cups chicken broth
  • 3/4 pound velveeta, cubed
  • 2 - 7 oz boxes elbow macaroni, cooked & drained
  • 3 cups cubed cooked chicken
  • 1 - 2 oz pimiento, drained
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make chicken macaroni casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In Large saucepan, melt butter. Stir in flour until combined.
  • Step 3
    Add cream and 1 1/2 cups broth all at once; stir til smooth. Cook and stir til thickened & bubbly;cook & stir 2 minutes more.
  • Step 4
    Remove from heat; add cheese & stir til melted.
  • Step 5
    Stir in Macaroni, chicken, pimiento, salt & pepper. Add additional broth if needed.
  • Step 6
    Pour into 3 quart baking dish and bake uncovered for 40 minutes or til heated through.
