Ingredients

  • 1.5 cups macaroni, cooked
  • 6 slices low-fat bacon, cooked and crumbled
  • 2 cups chicken, cooked and cubed
  • 1/2 cup onion, chopped and cooked
  • 1/2 cup bell peppers, chopped and cooked
  • 1 can cream of mushroom soup, fat-free
  • 1 cup fat-free sour cream
  • 1.5 cups frozen mixed vegetables, thawed
  • 5/8 teaspoon garlic powder
  • 1.5 cups fat-free cheddar cheese or lowfat shredded

How To Make chicken mac casserole

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Prepare a 8 x 12\" pan with cooking spray; set aside.
  • Step 3
    Return hot macaroni to saucepan.
  • Step 4
    Stir in bacon, chicken, onions and bell peppers.
  • Step 5
    In a mixing bowl, combine cream of mushroom soup, sour cream, mixed vegetables, garlic powder and 1 cup cheddar cheese.
  • Step 6
    Spoon half the macaroni mixture into prepared pan.
  • Step 7
    Cover with half vegetable mixture.
  • Step 8
    Repeat layers.
  • Step 9
    Bake, covered, for 30 minutes or until heated through.
  • Step 10
    Top with remaining cheddar cheese.
  • Step 11
    Bake, uncovered, 3 minutes more.
