chicken breasts, boneles, skinless and cut in 1 1/2" chunks
"just a pinch" of salt
"just a pinch" of pepper
1/4 c
olive oil
2 large
garlic cloves, minced
1 tsp
dried oregano
14 oz
artichoke hearts, drained and halved
3 Tbsp
lemon juice
1 c
1/4 c
parsley, fresh and chopped

How to Make Chicken Lucia


  • 1Season the flour with salt and pepper and dredge chicken in flour mixture.
  • 2Heat the oil and garlic in a large skillet; When hot, add the chicken.
  • 3Sprinkle with oregano and simmer over medium-high heat 3 to 4 minutes.
  • 4Add the artichoke hearts, drizzle with lemon juice and add water.
  • 5Cover and simmer until the chicken is done, 5 to 10 minutes, adding parsley in the last couple of minutes.
